Blood orange jamalade

Jam on toast The other day I bought a kilo of organic blood oranges feeling very good about myself, thinking I would peel them and feed them to the girls or use them in food, especially the zest, because it was organic. Days passed without any intentions of preparing them in any way. Days passed with bloggers' reports of making marmalade. Confiture de fraise "minut'"

Chaque année je suis prise d'envies de faire des confitures, surtout la fraise, curieusement. Je me rappelle des premières fois ou je galérais car elle ne prenaient pas et se transformaient en fraises au sirop malgré tous mes efforts. C'était bon, mais un peu dommage. Aussi, parfois, j'avoue, je craque et triche avec des sucres gélifiants. Méfiance quant aux sucres à prise quasi instantanée, ils contiennent parfois des matières grasses hydrogénées. Ici, j'ai pris un sucre 1:1 (marque belge Candico), c'est à dire, pour le même poids de sucre et de fruits. Il contient de la pectine, qui est un gélifiant, ainsi que de l'acide citrique. L'avantage est qu'il conserve la couleur du fruit car la cuisson est courte. Il manque le petit côté caramel, mais bon, on ne peut pas tout avoir.
